Fattoush is my all time favourite salad that my neighbour Linda Saunders makes. It is so fresh and so healthy, I now make it every week, but maybe not quite as good as Linda!

Ingredients:
x2 sleeves of Watercress chopped
x2 bunch Parsley chopped fine
x1 bunch of Mint chopped
x1 bunch of Spring Onion chopped
x4 Firm Tomatoes diced
x2 Lebanese Cucumbers diced
x1 bunch of Radish
Extra virgin olive oil
x1 Lemon juiced (or to taste)
Sumac
Salt to taste
Pita bread cooked on a tray in the oven until hard and then break onto the finished salad.
