Looks Fancy (but is so easy) Smashed Avo

INGREDIENTS

1 slice well toasted ezikiel or essene sprouted wheat bread

1/2 avocado

1/2 tub fresh ‘Pom life’ pomegranate seeds

1/2 square of Meredith goats feta

1/2 bunch roughly Chopped coriander

Drizzle of extra virgin olive oil

METHOD

Mash the avocado,

Toast bread

Top the bread with all the ingredients!

Couldn’t get more simplistic than that!

 

 Top with an egg at brekkie or two grilled chicken tenderloins at lunch to eat this at any time of the day! 

I have this at least twice a week so clean and so easy.

A little on sprouted wheat breads!

Sprouted grains and the preparation of this bread at low temperatures allows for maximum vitamin level content with higher lever of trace minerals and goodness.
It contains legumes such as barley, millet, lentil and oats providing amino acids the building block for proteins. Sprouting also breaks down lectins and other substances people may be intolerant and sensitive too. It will also leave you feeling satisfied and less likely to snack in between meals because it is a complex carbohydrate with the added benefit of protein! And one slice is enough!

You will find this wonder bread in your health food store in the fridge section. Yum!
